History
It was created in the 1920s by Harry MacElhone, owner of Harry's New York Bar in Paris. The name refers to the experiments of the physician Serge Voronoff, who grafted monkey testicle tissue into humans with the promise of prolonging life. Some recipes swap the absinthe for pastis or Bénédictine.
