History
It predates Prohibition and takes its name from the Clover Club, a Philadelphia men's club founded in 1882 that met at the Bellevue-Stratford hotel. Recipes almost identical to the current one were already being published in 1908, and under the name "The Clover Club Cocktail" it appears in 1910 in The Barkeeper's Manual, by Raymond E. Sullivan. The egg white acts as an emulsifier and forms the drink's characteristic foam.
